The joys of eating: caveman style

For those of you who don’t know much about the Paleo diet, here’s a great website to find out more. It’s actually less of a diet, and more of a lifestyle. It’s a great way to eat in order to feel better, and even lose some weight. Last week I made (attempted to make lol) Asian chicken lettuce wraps. I marinated organic chicken thighs in tamari (wheat free soy sauce) and then baked them in the oven. While the chicken was cooking, I stir-fryed bean shoots, water chestnuts, baby corn (not technically Paleo–you can omit these) and bamboo shoots. Once I combined the oven baked chicken with the other ingredients I added a little bit of honey, in order to get that famous Asian sweet-sour combination. Once I incorporated the honey, I then took a spoonful of my ingredients and added it to my lettuce leaves…all in all it was pretty easy 🙂

Apple crisp with coconut ice-cream 🙂

I finished my meal off with a Paleo friendly dessert. I promise this tastes ALOT nicer than it looks 🙂 It is so easy to make aswell. I got the apple crisp recipe from here. Instead of using xylitol, I used coconut sugar– it’s easier for me to digest, and also has a low GI (Glycemic index.) I also made my own almond flour, by buying blanched almonds and grinding them in my vita-mix (blender.) The ice-cream was amazingly easy– I just took a can of coconut milk, added about 3 heaping tbls of coconut sugar (you can add more, or less according to your taste) and then finished with 1 tsp of vanilla extract. I combined these ingredients in my blender and then added everything into my ice-cream maker. Easy!

As with all cooking, it’s supposed to be FUN! So feel free to play around with ingredients, and add or omit things that you don’t like. The Paleo way of eating is surprisingly easing to adhere to, and there are tons of recipes online for you to try. Let me know if you have any recipes for me to try…I would love to hear 🙂
